Happy Halloween everyone!!!! Hope you all have your costumes ready to go for tonight. The husband and I are being lame with no costumes, just gonna make some soup and have a little fire while we hand out candy. Here is a traditional fall soup to celebrate with tonight.

Butternut Squash Curried Soup

Ingredients:

  • one medium onion chopped
  • 2 celery stalks chopped
  • 1 large carrot chopped
  • 4 cloves of garlic chopped
  • 3 cups of cubbed butternut squash
  • 2 cups of vegetable stock
  • 1 cup water
  • 1 tsp curry powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1 can drained and rinsed chickpeas
  • 1 tsp chopped fresh sage leaves
  • salt and pepper to taste

1) Heat olive oil in a large soup pan over medium heat, once hot add all the veggies and cook until they are softened and have a golden brown color.

2) Add vegetable stock and water, bring to a slow boil and lower heat to a simmer

3) Add spices and allow to cook for approx 45 min or until butternut squash is very soft.

4) Puree soup with an immersion blender.

5) Add chickpeas and sage, cook addtional 20 min.

6) Add salt and pepper to taste, serve and enjoy!
