Meatless Monday……Peaches!!!!

You would have thought I was a crazy person if you were at Sprouts the other day….. I literally gasped out loud with excitement when I saw fresh California peaches!!!! I wait all year for this!  Sure all winter long you can buy the ones that get sent in from South America but they always taste like crap I think. Nothing compares to a fresh tree ripened peach! We in Arizona are lucky enough to have Schenpf Farms out in Queen Creek that has a big peach orchard where you can go pick your own (fyi the Peach Festival is this weekend, May 21st and 22nd). So when I got home with my peaches I just had to make this recipe, one of my favorite summer time lunches!

Israeli Couscous Salad with Peaches

1 serving Israeli couscous prepared per package directions

2 handfuls of fresh baby spinach

2 large ripe peaches, cut into bite size pieces

1 tsp. canola or olive oil

3 tblsp. apple cider vinegar


1) Prepare couscous per package directions, then divide between 2 bowls, placing couscous on top of fresh spinach. This will slightly wilt the spinach. Top with peach pieces.

2) Combine oil and vinegar in a small bowl and stir to blend, season with salt and pepper to taste and then divide mixture between two bowls of salad, toss to coat. Now enjoy!

(You can usually find Israeli couscous at Whole Foods or Trader Joe’s)

This recipe is great because its so super easy, perfect for making ahead of time for a lunch to take to work. It has such a great flavor, sweet and savory!
