Hopefully everyone isn’t sick of Mexican food after Cinco De Mayo last week cause this recipe is yummmmmy! Its super easy and perfect for a work day dinner. I have to give credit to my husband for the guacamole, he came up with the idea last summer and we both loved it and make our guac like this every time now.

Grilled Guacamole and Black Bean Tacos

1 can refried black beans

2 ears of corn

1 tblsp olive oil

1 large oninon

1 jalapeno

3 garlic cloves finely chopped

3 ripe avocados

1 tomato chopped

handful of fresh cilantro

juice of 1 lime

whole wheat tortillas

1) Heat black beans on low in a small pan.

2) Rub 1/2 tblsp olive oil on corn and place corn on a grill, grill each side for approx 2 min.

3) Chop onion and jalapeno,  coat with remaining olive oil, and place in a grill pan on your grill. Cook for approx 5-7 min stirring occasionally until they are nicely browned to your preferred degree on doneness.

4) Peel avocados and place in a large bowel, add grilled onion and jalapeno, mash together. Add chopped garlic, tomato, cilantro, lime, and salt/pepper to taste.

5) Shave grilled corn off the cobb

6) Pile black beans, corn, and guacamole on a tortilla and enjoy!

I also grilled some red bell pepper strips and added that to my taco, mmmmm! The grilled onion and jalapeno makes the guacamole amazing!
