Meatless Monday

Tonight I went back to one of my husband’s favorite vegetarian meals that is also super easy to make. Potatoes are his second favorite thing (after steak) so I try to include them in my Monday dinners so he doesn’t whine to much! Take potatoes and put them into dumpling form and you have gnocchi, add a few other things and you have a great dinner.

Whole Wheat Gnocchi with caramelized onion and garlic

1 package of pre made whole wheat gnocchi

3 tblsp olive oil

2 medium onions chopped

6 mushrooms chopped

6 garlic cloves peeled

1/4 cup dry white wine

1 tsp fresh rosemary

1/4 tsp smoked paprika

salt/pepper to taste

shredded parmesan/romano/asiago cheese

(any cheese combination will do)

1) Heat pan over med/high heat, once pan is hot add olive oil. Add onion and saute until brown and tender, stirring occasionally. Then add mushrooms, saute 3 min, then add garlic.

2) Boil large pot of water and then add gnocchi, cook until they float on the top, approx 7 min.

3) Once gnocchi is cooking add white wine to the onion mixture and stir. Turn the heat down and add rosemary, smoked paprika, salt and pepper.

4) Add fully cooked gnocchi to the onion mixture, if it appears dry add 1 more tblsp olive oil, toss well. Add cheese on top and serve.

We had our gnocchi with a spinach and mushroom salad and garlic bread, it was good! I posted a picture of the shredded cheese blend I used from Trader Joe’s. It is super flavorful and cost only about $2.50, love it!
