Meatless Monday

Today was kinda a last minute throw it together meatless dinner. I spent the day with my bestie at the spa, it was heavenly! But then I came home and realized I still needed to figure out something for dinner. So here is my best attempt!

Smokey Garlic Potato Hash with Spinach and Eggs

4 large red potatoes

2 tblsp olive oil

1/2 large onion diced

5 garlic cloves diced

1 tsp smoked paprika

1 tsp chopped fresh rosemary

4 large eggs

1 large handful of fresh spinach

salt/pepper

1) Wash potatoes and poke a few holes in them, microwave on high for 3-4 minutes, until they are just beginning to be softened. Dice potatoes into small pieces.

2) Heat large skillet over med/high heat, once hot add olive oil. Once olive oil is hot add potatoes and onion. Cook until onions begin to brown, approx 5-7 minutes, add garlic. Stir frequently, once garlic is slightly browned turn heat down to medium, add more oil if needed, you don’t want dry potatoes or burnt garlic. Add smoked paprika, rosemary, salt, and pepper to taste. Continue to cook until potatoes are fully browned and cooked through.

3) In another skillet cook eggs how you like them, we prefer over medium.

4) Add spinach to potato pan, cook until wilted.

5) Serve potato spinach mixture with eggs on top!

This actually turned out to be very delicious in spite of the fact that I threw it together. If you wanted to make it with meat bacon or a grilled flank steak would fit just right.

Also, just a side note, smoked paprika is very different from regular paprika which to me has no freakin flavor at all. Look for it in the spice isle at your grocery store and if that fails you can find it at Cost Plus World Market.
