Meatless Monday

So another Monday to try and come up with a delicious meatless dinner. I decided to make a simple yet stunning roasted potato soup. So easy to make!

Roasted Potato Soup

6 large red potatoes

1 large onion

3 cloves of garlic

3 cups vegetable broth

3 tbls olive oil

1) cut potatoes into 1 inch cubes, sprinkle with olive oil, salt, and pepper. Roast in the oven @ 400 degrees for about 20 minutes, until just browned.

2) While potatoes are roasting heat 1 tbls olive oil in a large sauce pan. Saute onion for about 8-10 minutes until browned and tender, then add garlic and saute for another 2 minutes.

3) Add potatoes to sauce pan when done roasting, cover with vegetable broth, bring to boil, then reduce heat to a simmer.

4) Allow soup to simmer for 20-30 minutes. Remove from heat and using an immersion blender puree the soup until no large chunks remain. Season with salt and pepper to taste and serve.
