Meatless Monday

Recently I have decided that Monday nights at our house will be “meat-less monday”. For about the past 4 weeks I have been able to successfully pull this off to the point that my meat and potatoes husband has barely complained which may not seem like much but is actually a HUGE accomplishment. Here is a recipe that I made a few weeks ago from Cookinglight.com and it was soooooo delish! We both are excited to make it again soon!

Rosti Casserole with baked egg

1.25 cups fat free greek yogurt

2 tbls whole wheat flour

1.5 cups grated peeled turnip

1.25 cups shredded Gruyere cheese

.25 cup butter melted (or olive oil)

.25 cup chopped chives

1.25 tsp salt

1 tsp pepper

.25 tsp nutmeg

1 30 oz. pack shredded potatoes

6 large eggs

1. Preheat oven to 400 degrees

2. Combine yogurt and flour in a large bowl, stir well. Add turnips, Gruyere cheese, butter, chives, salt, pepper, and potatoes, stir well. Spread mixture out in a 13x9in pan coated with cooking spray. Bake at 400 degrees for 30 minutes. Remove from oven and with the back of a spoon make 6 indentations in the top. Crack 1 egg into each indentation and return to oven for another 7-9 minutes. Remove and serve!!

For our dinner I also added about half of a large onion sauteed in olive oil and some chopped broccoli and then served it along with a side salad topped with bruschetta. It was the perfect combination of crunchy on top and cheesy on the inside! YUMMO!
